I dunno but… For comparison, I have a B.S. in Computational Mathematics with a minor in Physics, and I have never once actually used it for anything. My current job required a degree but not specifically that degree. It is ostensibly one of the those useful, in-demand majors, but I couldn’t find many job opportunities for it that applied to me, or that I actually wanted… So honestly your path sounds MUCH MUCH better to me, personally. Plus your major sounds way cooler.
i only had a nightshift job for a relatively short period of time, so my insight is minimal. personally, it mostly felt like being exhausted all the time, bcause the rest of my life refused to make any allowances for the adjustment in my sleep schedule. like, friends still only wanted to hang out when i should have been sleeping? same with setting up appointments, going shopping, etc etc.
otherwise, i felt like if that wasn’t the case, i would have been pretty happy with it. mostly because there were less people overall to interact with in my waking hours, which was nice.
Might be a bit of a stretch, but start a paper mill company! They make a whole town smell REALLY REALLY BAD. During my childhood there was one in Downingtown, Pennsylvania, and it was not a tourist destination at all. Then the paper mill closed and suddenly it WAS a tourist destination.

well, since taste is subjective and you’re looking for an objective measure, I’m just going to judge on other grounds! I suspect that the vanilla industry is less bad for the environment and has a better track record with labor violations, so vanilla is better.
Now, I didn’t research that first, and I could definitely be wrong… but at least it’s something one can actually be wrong about.
